Chex Mix Recipe

This is a recipe for homemade Chex mix. What makes it special is that it's extra delicious and flavorful. If you've only had the store bought mix, then you're really in for a treat.

"Flavor" Ingredients
7/10ths stick of butter
2.5 tablesspoons of Worcestershire sauce
2 teaspoons seasoned salt

"Content" Ingredients (Total 10.5 cups)
2 cups Japanese chili bits (rice snacks) with peanuts
1.5 cups dollar store pretzels
1.5 cups Wheat Chex
2 cups Corn Chex
1.5 cups Rice Chex
1 everything bagel, preferably a day or two old (equivalent of 2 cups)

  • Instructions
    1. Start by making bagel chips. Put the entire bagel in the toaster oven without slicing it. Toast for a bit longer than you would normally toast a bagel.

    2. Put the toasted bagel on the cutting board, and let it cool for 30 seconds. Cut it with the serrated knife, in the opposite direction of how you would normally slice a bagel. Make the slices as thin and round as you can make them. If they smoosh, un-smoosh them with your fingers.

    3. Coat the bagel chips in the olive oil. You can do this in a bowl or in a Ziplock bag.



    4. Next it's time to melt the butter. Set the oven to 275 F, and don't wait for it to reach that temperature. Put the butter in the cake pan, and put the cake pan in the oven. While it's melting, open all of the packaged food so everything is ready.

    5. As soon as the butter has melted, take the pan out of the oven. (Leave the oven on.) Spread the butter around with the spatula if it hasn't naturally spread itself around.

    6. Mix in the Worcestershire sauce and seasoned salt, and stir.

    7. Mix in each of the content ingredients one at a time, in in the order of least to most absorbent. This order is: Chili bits / peanuts, pretzels, Wheat Chex, Corn Chex, Rice Chex, bagel chips. Between each one, stir completely, so that everything is equally coated. This will take a longer and longer time with each ingredient added. Even though the bagel chips are last, they still need to be coated in the butter/sauce/salt mixture. Take your time.

    8. By now, the oven has reached 275 F. Put the pan in the oven and cook for an hour, stirring every 15 minutes.

    Alterations and Substitutions
    This recipe is for slightly burnt Chex mix, because that's the best. If you don't want it burnt at all, cook at 250 F. If you want it extra burnt, cook at 275 F, but don't stir once it's started cooking.

    Note that standard Worcestershire sauce is not vegetarian, because it contains anchovies. However, some brands, such as Annie's, make it without anchovies.

    You can sub out anything, even the Chex. The golden rule of substitutions is that 10.5 cups of content ingredients is the maximum. You must not increase the content-to-flavor ingredient ratio! Decreasing it is fine.
